The Ruby Group, led by founder and CEO Michael Struck, has announced it will open The Ruby Edinburgh, it’s first hotel in Scotland, in 2025.

The Ruby Edinburgh will be on Princes Street, the main road in Edinburgh, which is known for its shopping, and will also sit opposite Princess Street Gardens Park.

The property will feature around 300 rooms spread across seven floors. The hotel will also be home to a 24/7 bar and a rooftop terrace with panoramic views of both the World Heritage Edinburgh Castle and Edinburgh Old Town.

The hotel will be centrally located, with Waverley Central Station a 10-minute walk from the hotel and the international airport able to be reached within 30 minutes.

The new Ruby Hotel will be a conversion with partial new construction of three connected buildings. Ruby Group has partnered with Edinburgh-based real estate investment management company Hunter REIM to deliver the project.

Andrew Moffat, head of real estate and investment at Hunter REIM, added: “Hunter REIM is delighted to be able to announce the next step in the regeneration of Princes Street in Edinburgh with the announcement of a new Ruby Hotel and associated retail development at 104-108 Princes Street. We believe we can deliver a significant improvement in the streetscape in Princes Street and, importantly, retain some retail space as part of the development.”

Ruby Group already operates 15 Ruby hotels, with a further 19 hotels under construction or in the planning phase.
